Tonight we are having Chicken and Dumplings made from leftover chicken that I made for dinner yesterday
Tuesday: Burgers on the grill, garlic roasted potatoes. We were supposed to have these over the weekend but two days of yard work back to back and we were DONE so I made hotdogs instead, quick easy and filled a hole, lol
Wednesday: Baked Fish, rice and a veg- probably broccolli but I'm not sure yet
Thursday : Nachos/Taco Salad and dirty rice
Friday: Hm Pizza
Saturday:
Sunday:
The weekend is up in the air, Dh works on Saturday, could be a couple hours, could be all day, who knows ?? And I need to do my monthly grocery shopping trip which I will be taking 3 children along on so it will more than likely be something quick and easy since I will most definitely be SPENT/DRAINED but my munchies will still need fed so I'm all about some quick and easy dinner!!!

Menu 6/17-6/23
Here it is Tuesday again, lol I'll be on time one of these days, at least that is the plan right?? lol
Monday ( last night)- BBQ Chicken, potato salad, green beans, fresh tomatoes and cucumbers - We were supposed to have this meal on Sunday but dh came home from the Canoe trip he and my oldest went on absolutely exhausted and several hours overdue so by the time we were all in the same place at the same time we decided to postpone our Father's Day meal and we ordered Pizza instead. Not such a great idea for the budget/wallet but we decided to call it a mercy meal and just roll with it. I'm glad we did, we were all over done and over tired from the weekend.
Tueday- Pan fried fish and french fries
Wednesday- Sausage patties, eggs and fried potatoes
Thursday- BLT'S- my oldest has scouts so this will be a fast meal when he gets home!!
Friday- Loaded Stromboli for the adults, mini hm pizzas and bread sticks for the kiddos and any leftover lettuce and tomato from BLT night will be made into a simple salad to go with the strombolis
Saturday- Burgers on the grill, on hm rolls, garlic roasted potatoes
Sunday- It's a toss up I've got a whole chicken in the freezer but I also have some ribs frozen as well. I guess it will depend on what dh is craving and if he has to work or not. There's been mention of some upgrades or something that he has coming up, he'll be working from home but depending on how involved the work is he might have time for a big Sunday type meal or he might just want something quick so he can get back to work.
So there ya go that is our meal plan for the week.
I forsee us needing Milk, eggs, tomatoes, and possibly mozzarella cheese but nothing else. I need to check the freezer seems to me like I have mozzarella cheese. If I do that would be awesome. Trying hard to stay out of the stores. Money is tight and it seems to only be getting tighter and I need to cut back where ever I can so that I can have the money for back to school needs.
I've clipped my coupons as well and will see if there are any "can't pass up" deals when I go out to get the few items I need for this meal plan.

Menu this week 6/10-6/16
Yep, late posting this again. Oh well I'm trying to be better about it, I need to be more accountable so that we eat out less and spend less. Having a plan has helped me do that in the past and with school getting out soon and my eating machines being here all day everyday I need to be on top of meals, snacks and I need them to be frugal so my hope is that having a plan will do that for me.
Monday (last night, lol) We had Italian Sausage links, onions, peppers over rice
Tuesday ( or tonight's dinner) We'll being having Fried Chicken Salads with hm croutons made with leftover hot dog rolls.I've made these before with a recipe at a restaurant I worked at in my teens. The batch I am making today will be by the seat of my pants and from memory. My oldest would eat these like chips so I'm hoping they turn out, it will do wonders for leftover bread from cookouts and such. Is is me or do there always seem to be an odd number of buns leftover from cookouts?? What ever buns don't end up as Croutons will be made into bread crumbs and I want to try my hand at Homemade Shake and Bake.
Wednesday: Beef and Shrimp Kabobs either over rice or with baked potatoes- My oldest is "graduating" from 5th grade/elementary school and moving on to the big league of MIDDLE SCHOOL so we're celebrating a bit!!! I'm planning on making a pan of brownies and having some icecream to go with it!!!
Thursday: Spaghetti/Manicotti, garlic bread
Friday: Baked Chicken Pieces, mashed potatoes, green beans and hm rolls- My oldest is headed out for a weekend of scout camping and I want to send him off with sufficiant meal before he leaves. I swear they don't feed those boys enough. They come home from these camping trips RAVENOUS!!! lol Could be they eat just fine and they're just growing boys, but at any rate I want to make them a decent meal before they leave!!
Saturday: Is supposed to be BEAUTIFUL so I am planning on burgers on the grill!!
Sunday Is Father's Day and I want to drop by the cemetary to visit my daddy, and then come home and honor my children's Daddy with a decent meal on the grill. I am truly blessed to have had the father I had, and blessed again for my children to have the father they have. One of my daddy's favorite thing to grill out just so happens to be one of my hubby's favorite thing to grill out too and that is BBQ CHICKEN. I can take it or leave it but I plan on marinating some chicken in greek seasoning and also grilling some BBQ chicken as well. It will be a chicken feast which is right up my Hubby and sons's alley!!
Enjoy your week!!!

Wednesday 1/3/2013
Wow that feels weird to write, 2013!!!
Today is a back to normal kind of day for us, I've packed the hubs lunch and he is off to work, the boys are off to school and that leaves little miss and I home today to take care of the laundry, dishes and housework.
I am fixing to put some leftover roast in the crockpot to cook off the bones and I'll turn it into dinner for tonight.I am thinking beef and gravy over hm buttermilk biscuits mmm sounds good to me. Or maybe beef, mushrooms and gravy over rice, mmm either way it will be great. Great for the budget to use up leftovers and great for the tummies because they'll be full of yumminess!! Win-Win if you ask me!!
Looks like this week will be full of leftovers. I baked a ham on Sunday. We've been enjoying it since!! On sunday we had Ham and Fried Potatoes, Monday dh took a ham sandwich in his lunch box, then Monday night we had more Ham made into Ham, egg and cheese on Toast, YUMMY. Today dh took a ham sandwich in his lunch box,and if I get to it today I plan on cutting up what I can to make him sandwiches for the rest of the work week, and also to cube some to use in fried rice. I also have some veggie platter leftovers from Saturday's birthday celebration for our daughter, I'll use the veggie platter leftovers in stirfry, there's carrots, broccolli, snow peas and celery, that will make a great stir fry!! That ham was decent size so I'm hoping in addition to the fried rice I have planned I'll be able to freeze some for later use either in more yummy fried rice or with eggs in an omlet or in Scallopped potatoes with ham, hmmm I LOVE leftovers!!
Well I better get busy, lots to do and just me and Boo here to get it done!! I'm thankful that we took the tree down yesterday while everyone was here to help, thats one less thing that needs done :)

Menu plan Monday
Ok so here's my menu for this week:
Tonight we have scouts so it will be a heat and eat of Thanksgiving leftovers. Easy Peasy on a rushed and crazy night!! The only thing I need to make fresh is a pot of mashed potatoes, and some rice, I've got leftovers of everything else
Tuesday: I'll be using leftover Ham from Dh's grams and leftover mashed potatoes to make
Ham, eggs and potato cakes for dinner- Breakfast for dinner is a fave around here
Wednesday: I have leftover meatballs on purpose, made from last nights "Bill Jerome" subs night.
*Funny story, when I was a kid every once in a while my daddy would want subs, so he and mom would go to the store to get EVERYTHING you can imagine for Build Your Own Sub night. And that is just what we did, most of the time the subs were cold cut subs and sometimes they were steak and cheese kind of subs but either way it was build your own meaning you could put on it whatever you liked. My daddy was cool long before there was ever a subway, lol
Anyway we normally have company Sunday evenings and I suggested a month or so that one Sunday we have Build Your Own Sub Night, my friend said Oooh Sounds great..we love subs. Then seriously said to me Who is Bill Jerome? At first I didn't get it, so I asked again what? And she says to me.. You said you were going to get Bill Jerome Subs, who is Bill Jerome, is that a new place, I've never heard of it? To say I LOL would be an understatement, I explained and then we both had a big laugh!! So from here on out, Build your own sub night will be called Bill Jerome!!
So on Wednesday since I have leftover meatballs I think I will make spaghetti with meatballs and hopefully some homemade garlic bread
Thursday: will be another Bill Jerome night since I have lots of leftover meats and cheeses
Friday will probably be hm pizza
Saturday and Sunday are up in the air due to my monthly shopping trip.

Monday 7/9/2012
Good Morning!!!
I am sitting here in the quiet, having got up early to make dh's lunch and send him off to work I have been the only one up for awhile, my middle child just came down the hall but he his not quite awake. The other 2 children are still asleep. I love lazy summer mornings!! We woke up this morning to
RAIN GLORIOUS RAIN!!!!!
Our garden, needed it to be sure!! The 2 short bursts of rain we got this past week has really made the pumpkins take off so I can only imagine what this awesome soaking rain will do for the garden!!!
How was your weekend??
Ours was busy but productive and wonderful!!!
Saturday we stuck pretty close to home for the most part, we did till in the garden, mow, and ran the weed-eater around the garden fence, dh repaired a piece of fence that it looks like a deer tried to get into the garden, thankfull it didn't. We came in and showered because it was 101*+ and we were dripping after working in the yard, then we met up with a former scout parent and picked up our scout float from him and are storing it at my mothers for the time being. We came home and worked in the house some but the heat really zapped us so we were happy to just relax and watch a movie for the most part!!! I think the guys especially the Hubs stayed up way too late watching tv because come morning everyone was having a hard time getting up infact dh was still asleep when I left for church. I left him sleep and told the boys to stay quiet so he could rest and Baby Girl and I went to Church.
*Cute side note, I'll be cuddling Kara and ask if she is momma's "baby" to which she replies " I mommas howny baybee" So I've been calling her Honey Baby!!
Church was wonderful!!! Kara was super excited to be there and she just chatted and chatted, it was a chore trying to keep her quiet during the service, our Pastor who has a young child hisself - Thanked God for the voices of small children because they are truely a blessing to us- during one of his prayers. He really is a great Pastor!! Of course Kara wasn't the only little person chatting and socializing!! I love our church!!
Soon all the littles were called up for children's time and then after led out to their "classes"
The rest of church was great!!!
After Church, Kara and I came home, I made lunch for all the kids and then made dinner for the kids and put it in the fridge, I tidied up a bit, then got myself fixed up and Kara and I went to pick up the sitter. We left the kids here in capable hands, with instructions on cooking the dinner, then Mike and I went out to dinner and to a movie!! Gosh I can't even tell you the last movie I saw in a theater... I'm guessing it was maybe the Polar Express?? It has been quite a while.
Dh took me to Outback Steak House for dinner, it was AMAZING!!! Then we went to see The Avengers!! It was equally good!! We had such wonderful time!!! We came home and the kids were great, they had a wonderful time with the sitter!!! She really is a sweet girl, she is 15 and the daughter of a great friend and the best part is she only lives about a mile from us. GREAT with my kids and we adore her!!!
We ended the evening hanging out and watching a show with the kids, I crocheted a bit, I really should be more diligent about it concidering I have 4 babies needing blankets that are due before the end of the year!! YIKES!!! I gotta get busy!!!!
But that was our weekend, busy, productive, family filled, and wonderful!!!
My day today will be somewhat busy, I need to take dh's gram to the dr, do a little shopping and work on the laundry and then there is VBS!!! And this year I am a leader!! Whoo, I don't know what I was thinking when I signed up but I'll handle it and I am sure it will be a wonderful time!!!!!
Oh and before I forget it is Monday I probably should post our menu right??? :)
Tonight- BLT's and Cukes from the garden
Tuesday- Chicken alfredo with mushrooms and broccolli
Wednesday-Hamburgers and chips
Thursday-Lasagne and garlic bread
Friday- Hm Pizza
Weekend?? Thats kind of up in the air, if the temps cool down like its supposed too we will probably grill out being that its will be Dh's last weekend before his Septum surgery on the 16th, he probably isn't going to want much to eat and if he does it will probably be something soft that he asks for. Poor fella!!!
Hope you all have a wonderful day!!!

Menu Plan Monday
Tonight: Leftover Chicken made into a pasta dish. It's an experiment. On friday I took some chicken tenderloins and marinated them in a couple packets of Garlic, Herb and Wine marinade. Then I baked them cut them up and served it over a huge salad it was a DELICIOUS!!! Well I have a good bit of chicken and the sauce leftover so I am going to saute' some baby portabello mushrooms and mix the mushrooms with the leftover chicken and sauce and serve it over rotini pasta and sprinkle it with parmesan cheese. I'm hoping it will turn out ok, if not there's plenty of other leftovers in the fridge that can stand in if no one likes the chicken pasta.
Tuesday: Ham, fried potatoes, corn and lima beans
Wednesday: Spaghetti
Thursay: Beef and Snow Pea stir fry, over rice
Friday: Hm pizza and bread sticks
Saturday: Cub Scout End Of Year Picnic
Sunday: Beef Roast- not sure if we want it pot roasted or just roasted, so it will either be served with mashed potatoes, or baked potatoes.
